The soaring height of the vineyard and its northern geographical location creates ideal ripening conditions - snowy winters, late onset of spring (April), long ripening at relatively low summer temperatures, day/night temperature differentials and high levels of sun radiation.All of these contribute to the perfect conditions for strong, densely concentrated fruit, high acidity levels and strong tannin structure.

Dishon Vineyard | Kadesh Valley
A valley enclosed on three sides, featuring rich, fertile soil and a cool climate during ripening. In recent years, the area has been recognized as one of the highest quality locations for growing Cabernet Sauvignon grapes. Ripening is at the end of August/ beginning of September. Grapes are characterized by an intense, earthy flavor.Location: Moshav Dishon

Located on ancient stone terraces on the edge of a cliff overlooking Makhtesh Ramon (Ramon Crater).Prevailing desert temperatures and dryness result in a long ripening period and optimal extraction of the variety’s excellent flavors, similar to ripening conditions in the northern Golan Heights.

Nir Vineyard | Moshav Mata – Jerusalem hills
The geographical structure of the wadies, the soil type, and the small quantities of minerals moderate vine growth, yielding quality, concentrated fruit. Ripening of the red varieties is from the first week of September.Location: south of Moshav Mata – Jerusalem hills

Altitude: 700 meters (2,100 feet)
Soil: Clay-like texture with mid levels of chalk. Deep wadies and shallow, well-drained slopes.
