
Cabernet Shiraz 2007 | Pelter Series
50% Cabernet Sauvignon and 50% Shiraz grapes. harvested by hand from the vineyards of the Golan Heights and Jerusalem hills. Aged 18 months in French oak barrels. Characterized by flavors of berries, black pepper and wood. A soft, rich finish.Equal blend of Cabernet Sauvignon and Shiraz.
Full bodied, ripe fruit and high acidity.
Strong, complex tannin structure with potential to age for approximately 10 years.

Nir – Jerusalem hills – chalky soil (Cabernet Sauvignon)
Production:
Fermentation for two weeks with skins at relatively low fermentation temperatures. Pressing using the Punching method every 4 hours.
Malolactic fermentation in French oak barrels. Aged 18 months in barrels, a third of which were new, and a further 5% of American wood.

Medium bodied, deep garnet towards purple, this blend of about 35% Shiraz and 65% Cabernet Sauvignon offers up good balance between light oak, moderate tannins, black fruits (look especially for plums and black berries), those coming together nicely with spicy and just earthy enough sensations. With an appealingly sweet finish, the wine is drinking nicely now.

Aged in American oak for 18 months, this blend of 50% each of Cabernet Sauvignon and Shiraz shows a medium-dark garnet color, a strong acidic backbone and appealing spices and vanilla from the wood, none of which hold back layers of blackberry, cherry, herbal and earthy aromas and flavors. Good concentration, ripeness and smoothness lead to a long and generous finish on which one will find appealing hints of minted bitter-sweet chocolate.
