Produced from 100% premium Sauvignon Blanc grapes.Hand selected and picked followed by gentle processing and bottling.
Light bodied, fresh green grass and mineral flavors.
Crisp acid, long and refreshing finish
A fresh white varietal with a sharp, acidic structure. Emphasis on a unique varietal taste with no additional wood flavors or aging. The 2009 harvest was brought forward by two weeks, resulting in higher acidity.

Vineyard of the wind – Merom Golan – Basaltic tuff soil
Ben Zimriya – Upper Galilee – Terra Rossa/basaltic soil
Production:
Processing of the fruit utilizing the Whole Bunch Press method. The aim of this unique production method is minimal contact with the grape skins.
Fermentation for approximately 3 weeks at 13 degrees.
After racking – Cold and heat stabilization and filtering at a level of 0.45 microns before bottling.
Total of 3 months in a steel container.

A blend, perhaps playing on the Australian theme of 90% Sauvignon Blanc and 10% Semillon, but this one far lighter in body and color than its down-under brothers and sisters. A pleasant enough little wine, with light grassy, grapefruit and pineapple aromas and flavors followed by a hint of grassy bitterness on the finish. Not a wine for cellaring but one to be enjoyed as an appealing quaffer this summer or early autumn. About 600 bottles were produced.

Pelter, Sauvignon Blanc, 2008: Medium-bodied, light, bright straw in color, unoaked and with generous lively acidity to show off tropical fruits, red grapefruit and notes of grapefruit peel, all on a mineral rich background.
